What could be better than having pie for breakfast?!
Having two pies for breakfast of course!
One of my favorite things about being plant based is all the delicious recipes. I know some people thing the exact opposite, that they will find nothing enjoyable to eat. I want to show you that is far from the truth.
My favorite breakfast food is oatmeal. With such a simple and affordable ingredient I make so many delicious and satisfying recipes, and I never get bored. One of my current favorite breakfast recipes using oatmeal is Sweet Breakfast Pie.
All you need is
1 large ripe banana
1 cup oatmeal
berries of your choice
Mash the banana in a bowl and add the oatmeal, mixing until a dough forms. Place the dough on a parchment lined baking tray and mold into 1 or 2 pie shapes, creating a crust to keep the berries in. Top with your favorite berries and bake at 180° for 10-15 minutes. You can wait and put the berries on after you cook the pie base if you prefer.
