Healthy Chip Alternative

One of my favourite evening treats used to be chips (or crisps depending on what part of the world you live in). They are so crunchy and flavourful but they are also fried in oil. Since cutting out fried foods on a regular basis is a must on any health journey, I thought I would share a delicious alternative with you. So for any of you crunch lovers out there, these are a must try.

Roasted Chickpeas

Ingredients

1 can chickpeas

2 tbsp chili powder (or your favourite seasoning mix)

Method

1. Preheat oven to 180°C

2. Drain and rinse 1 can of chickpeas. Place the chickpeas between two clean kitchen towels and rub until dry. Discard any skins that come off of the chickpeas.

3. In a bowl mix together the chickpeas and the chili powder or whatever spices you are using.

4. Evenly spread the seasoned chickpeas over a lined baking dish and place in the oven for 30-45 min. After 15 min mix the chickpeas around. After 25 min check the chickpeas often as they can go from crispy to burnt quite quickly. Once you have made them once you will know how long they take in your specific oven and the next time you wont have to check them as often.

When they are done they will be warm and crunchy. Pop them in a bowl and enjoy!

Get creative and use some of your favourite spices to make these exactly how you like. In my 6 week Vibrant Life Program I share a bunch of my favourite flavour combinations and different ways to use these delicious crunchy chickpeas. Check that out here.
